Babbling Brook is a saison inspired by the refreshing minerality of ciders and Chablis. The base beer was fermented with a mixed culture of classic saison strains, wild yeast, and bacteria. Post-fermentation, the dry and lightly acidic saison was aged in 600 gallon Vin Santo casks for 6 months. The dessert wine casks imparted subtle nutty notes with a distinct brackish character softened by a light cellar quality. Babbling Brook is a dry saison reminiscent of river rocks and lake shores. Please cool before opening and pour with care, leaving the sediment in the bottle.
